Organic fast-causal cafe chain buys Seattle catering company
Organic To Go continues acquisition, expansion streak

Fast-casual café chain Organic To Go said Tuesday it purchased Jackrabbit, a Seattle-based catering company for an undisclosed sum.

Jackrabbit had $2 million in sales last year, Organic To Go said. The company has delivered premium box lunches and casual catering to King and Pierce counties for the past eight years.

Seattle-based Organic to Go, which raised $4.7 million and completed a reverse merger last month to become a public company (OTC Bulletin Board: SPHG). Total investment in the fast-causal chain since November 2004 is about $22 million.

Based in Seattle, Wash., Organic To Go is in its third year of operation posting $9.8 million in revenue last year, a 61 percent increase over the prior year.

Organic To Go now operates 12 cafes in Seattle, Los Angeles and Orange County. Its food is sold in more than 45 other locations, including college campuses, office complexes and airports.

Jackrabbit founder and owner Peter Cassidy and about 30 Jackrabbit employees will remain with Organic To Go, where Cassidy will become the new head of kitchens and catering production.

Organic To Go also opened a new retail café at Swedish Medical Center in Seattle, joining four other Organic To Go locations in the Seattle metro area.

The company' s salads, sandwiches and other offerings are also available at more than 25 other locations in the Puget Sound region including the University of Washington.
